Tyramine is a naturally occurring compound derived from the amino acid tyrosine and is commonly found in aged or fermented foods such as cheeses, cured meats, wines, and soy products. It can influence the release of norepinephrine, a neurotransmitter, and affect blood pressure. For individuals taking monoamine oxidase inhibitors (MAOIs), consuming high-tyramine foods can cause a dangerous hypertensive crisis. Therefore, a low-tyramine diet is often recommended for people on such medications. Tyramine can be retained and analyzed using a ZODIAC HST OG mixed-mode stationary phase column. The analysis employs an isocratic method with a mobile phase consisting of water, acetonitrile (MeCN), and sulfuric acid as a buffer, with UV detection at 275 nm.
