Description
The metabisulfite ion (S2O52−) is hydrolyzed to bisulfite (HSO3−) in water. Sodium metabisulfite, a white crystalline or powdered solid, has many uses, including being a source of SO2 in wine, a bleaching agent in coconut cream production, and as an additive in anesthetic solutions to prevent oxidation and extend shelf life. Ascorbic acid (Vitamin C), naturally found in citrus fruits and many vegetables, is essential for maintaining the health of skin, cartilage, teeth, bone, and blood vessels. Ascorbic acid and sodium metabisulfite can be separated, retained, and analyzed using a Zodiac HST SB mixed-mode stationary phase column. The analysis employs an isocratic method with a mobile phase comprising water, acetonitrile (MeCN), and phosphoric acid (H3PO4) as a buffer. Detection is done at UV 270 nm.
