Fumonisin B1 is a mycotoxin produced by Fusarium molds, mainly Fusarium verticillioides and Fusarium proliferatum, which contaminate corn and other crops. Due to its toxicity and widespread occurrence, monitoring fumonisin B1 levels in food is crucial for human and animal health.
Fumonisin B1 can be retained and analyzed using a Zodiac HST OG mixed-mode column with an isocratic mobile phase of water, acetonitrile (MeCN), and sulfuric acid buffer, with UV detection at 210 nm.
